Foodie Friday: Avocado Pasta

This is one of my favorite quick go-to recipes for dinner. This is also one of those that I play by ear with ingredients :-).

For the Avocado Sauce You’ll Need:

Avocado- usually 2 is good

Garlic cloves – about 2-3 depending on how much garlic taste you want

Lemon Juice – about 1/3- 1/2 a cup – basically until you get the consistency you want, or if you don’t want a strong lemon flavor, you can also add reserved pasta water in addition to the lemon juice

Salt and Pepper to taste

Blend these ingredients together until smooth.

Pasta:

Cook according to the directions. I have been using rice pasta or black bean pasta to be gluten-free. But use whatever kind you would like.

Garnishes:

Sliced cherry tomatoes and/or diced bell peppers for crunch

Parmasean cheese or Nutritional Yeast

 

Done! Super easy. Super fast.
